I'd go for the cooler first, I've had that exact issue with an 8v gti.
How does the car run?

My 8v ran absolutely fine and maintained water/oil temp. But I had a load of mayo in the coolant tank.
£30 cooler and an oil/water change and all was well again.

Really like updates like these, especially seeing you've numbered all the cables and the effort around the connectors. Like wise, where did you get the wiring numbers from? Never tried it myself, but I would have thought that VW would have wanted to keep everything as simple as possible to reduce production costs. So I'd have thought it'll have a very similar setup to the doors.
